Free acidity
% oleic acid
The first quality marker: it measures olive degradation before milling. Extra virgin: ≤ 0.8%. Our purchasing standards are stricter.
Peroxide value
meq O₂ / kg
It reveals the oil's primary oxidation: a low value means a fresh oil, well extracted and well stored. Extra virgin: ≤ 20; our typical lots run well below that.
UV absorbance
K232 · K270 · ΔK
Spectrophotometric constants detect advanced oxidation and the presence of refined oils: the safeguard against adulterated blends.
Total polyphenols
mg / kg
The oil's natural antioxidants: they drive nutritional value and shelf life. Early-harvest Tunisian oils are particularly rich in them.
Traceability, from mill to loading
1Identified mill
Every lot is tied to its mill of origin, its production area and its milling period.
2Tested lot
Sampling and lab analysis before purchase. Systematic tasting by our team.
3Controlled storage
Stainless-steel tanks under nitrogen at our partners' facilities: the oil is protected from air and light until loading.
4Sealed loading
Sealed flexitanks or tankers, seal numbers recorded on the documents. Independent counter-analysis by a laboratory such as SGS carried out at loading.

Tell us your requirements: we attach the corresponding certificates to the offer.

Product data sheets and sample analysis reports are available on request, in French and English. Every commercial offer includes the COA of the actual lot on offer.
